Never really like yam... but I like yam cake! Hahaha... my colleagues always say the yam cake we buy from stalls are not "yam" cake cos they dun have much yam... recently I saw a yam cake recipe online... thought might as well give it a try!
My yam cake is full of ingredients! I think I put too much ingredients!!! Hahaha... every bite is full of "liao" hahahah!

Yam Kuih
Ingredients400 g yam, peeled, cubed and steamed
Filling :50 g dried shrimps, chopped
1 - 2 Chinese sausages
10 pieces dried mushroom, soak till soften
½ carrot, shredded
2 cloves garlic, minced
2 tbsp oil
Batter :
200 g rice flour
40 g tapioca flour
400 ml hot water
Seasoning :½ tsp sugar
¼ tsp salt
¼ tsp pepper
Method :1. Stir-fry garlic in oil till fragrant. Add in rest of filling ingredients and sauté.
2. Put both flours in a bowl and pour hot water over. Mix well with wooden spoon to dissolve flours. Pour into a cooking pot. Add cooked yam, fillings and seasonings.
3. Cook all the ingredients on low heat till batter form a smooth, thick mixture.
4. Transfer to a steamer, smoothen top and steam on high heat for 30 - 40 mins.
5. Allow the kuih to cool completely, so it is easier to slice. Fry the slices in a little oil till crispy and light, golden brown.
